Lobster Ceviche with Limestone Lettuce

Serves 4

Ingredients:

1 clove garlic, peeled and minced
1/2 teaspoon powdered ginger
1/2 teaspoon freshly ground black pepper
1/4 cup fresh lemon juice
2 pinches salt dissolved in 2 tablespoons water
1 teaspoon yuzu juice
2 teaspoons soy sauce
meat of 1 boiled 2 pound lobster, cubed and chilled
12 very small bibb lettuce leaves
1/2 small red onion, peeled and very thinly sliced
3 cherry tomatoes, stemmed and quartered
12 fresh cilantro leaves

Method of Preparation:

1.    Whisk together garlic, ginger, pepper, lemon juice, salted water, yuzu juice, and soy sauce in a medium bowl. Add lobster meat to dressing and toss to combine.
2.    To serve, arrange lettuce, tomatoes, red onion, and cilantro leaves on a platter. Place the lobster meat in the center.
