Each recipe serves 4
BBQ Potatoes
Ingredients:
3 medium potatoes (such as red, purple, white or Yukon gold), cut into 1-inch cubes
2 tablespoons barbecue sauce
1 teaspoon cumin
1 tablespoons olive oil
Method of Preparation:
1. Preheat oven to 400 degrees. Line a sheet pan with foil.
2. Place all ingredients in a bowl and toss well to coat.
3. Spread potatoes on the prepared pan. Bake for 30-40 minutes, until potatoes are golden brown and soft in the center when pierced with a fork. Stir once or twice while baking.
Southwestern Potatoes
Ingredients:
3 medium potatoes (such as red, purple, white or Yukon gold), cut into 1-inch cubes
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon chili powder
1/2 teaspoon salt
Pinch pepper
1 tablespoon olive oil
1 teaspoon fresh cilantro, chopped
Method of Preparation:
1. Preheat oven to 400 degrees. Line a sheet pan with foil.
2. Place all ingredients except cilantro in a bowl and toss well to coat.
3. Spread potatoes on the prepared pan. Bake for 30-40 minutes until potatoes are golden brown and soft in the center when pierced with a fork. Stir once or twice while baking.
4. Remove from oven, toss with cilantro and serve.
Garlic Spiced Potatoes
Ingredients:
3 medium potatoes (such as red, purple, white or Yukon gold), cut into 1-inch cubes
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
Pinch pepper
1 tablespoon olive oil
Method of Preparation:
1. Preheat oven to 400 degrees. Line a sheet pan with foil.
2. Place all ingredients in a bowl and toss well to coat.
3. Spread potatoes on the prepared pan. Bake for 30-40 minutes, until potatoes are golden brown and soft in the center when pierced with a fork. Stir once or twice while baking.
