Viennese Apple Cake

Makes one 8-inch cake

Ingredients:
1 1/4 cup bread flour
1 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 egg yolk
1/4 cup plus 1 1/2 tablespoons sugar
3/8 cup raisins
1/2 cup chopped walnuts
4 1/2 tablespoons butter, melted
1/2 teaspoon vanilla
6 cups diced apple

Method of Preparation:
1. Preheat oven to 325 degrees. Spray an 8-inch cake pan with non-stick baking spray and line the bottom with parchment.
2. Sift together the flour, baking powder, and salt; set aside.
3. Using an electric mixer with a whisk attachment, whip egg, egg yolk, and sugar until thick and pale yellow.
4. Using a spatula, blend the raisins, walnuts, butter, and vanilla into the egg mixture.
5. Fold in the apples.
6. Fold in the dry ingredients (the batter will seem dry).  Pour batter into prepared pan.
7. Bake for approximately 45 minutes, until golden brown on top.  Rotate pan after 25 minutes to ensure even baking.
8. Cool for 10-15 minutes before removing from pan.  Dust with confectioner’s sugar before serving.
