Sweet And Sour Pork
Chef Frank Terranova makes Sweet and Sour Pork.(Serves 4)
Ingredients:
Cornstarch 2 tablespoons
Sherry wine 2 tablespoons
Pork tenderloin, cut into 1/2 pieces 1 pound
Water 1/3 cup
Sugar 1/4 cup
Cider vinegar 1/4 cup
Soy sauce 3 tablespoons
Ketchup 1/4 cup
Oil 1 tablespoon
Roasted cashews, chopped 1/2 cup
Scallions, sliced 1 bunch
Fresh gingerroot, chopped 1 teaspoon
Garlic, minced 1 clove
Pea pods, sliced 1/2 pounds
Pineapple, diced 1 cup
Method of Preparation:
1. In a bowl, combine 1 tablespoon of the cornstarch, the sherry and the pork tenderloin and mix well.
2. In a sauce pan, combine the other tablespoon of cornstarch, water, sugar, vinegar, soy sauce and ketchup and mix well.
3. Heat the oil in a larger skillet and stir fry the pork until just cooked.
4. Add the cashews, scallions, gingerroot, garlic and sauté until tender. Add the peapods and let cook 1 minute.
5. Add the ketchup mixture and bring to simmer until slightly thickened. Add the pineapple and toss well.
6. Serve over boiled rice.
