Spicy Thai Shrimp with Mint Raita

(Serves 4)

INGREDIENTS
Olive oil 2 teaspoons
Sesame oil 2 teaspoons
Fresh ginger, minced 2 teaspoons
Garlic, minced 1 teaspoon
Large shrimp, peeled and deveined 24
Thai red chile paste 1/4 cup
Lemon juice 2
Fresh chives, snipped 2 tablespoons
MINT RAITA:
Nonfat yogurt 1 cup
Cucumber, peeled, seeded, diced 1/4 cup
Green onions, sliced 1/4 cup
Mint leaves, sliced 1/4 cup
Lemon zest 2 teaspoons

METHOD OF PREPARATION
1. In a bowl, combine all raita ingredients and set aside.
2. Heat olive and sesame oils in a medium saucepan over high heat. Sauté ginger and garlic about 45 seconds. Add shrimp and chile paste, tossing to cook evenly, about 3 minutes.
3. Add lemon juice and stir.
4. Serve raita with shrimp; garnish with chives.
