Shrimp Scampi with Capellini

(Serves 4)

Ingredients:

Water, salted, boiling 4 quarts
Capellini pasta 3/4 pound
Olive oil 1/4 cup
Shrimp, peeled, deveined, split in half, 26-30 size 1 pound
Garlic, minced 4 large cloves
Onion, minced 2 tablespoons
Red pepper flakes 1/2 teaspoon
White wine 1/2 cup
Salt 1/2 teaspoon
Unsalted butter 4 tablespoons
Fresh parsley, chopped 1/2 cup
Cracked black pepper To taste
   
Method of Preparation:

1. Have the salted water boiling and sprinkle in the pasta and stir to prevent from sticking. Simmer 5 minutes.
2. While this is going on, heat a large skillet until hot, add the oil and shrimp and give it a quick stir. Add the garlic and onion. Stir.
3. Add the pepper flakes, white wine and let cook for 1 minute. Drain cooked pasta.
4. Add the salt, butter and cooked pasta to the shrimp, stirring well. Also add about 1 cup of the pasta water and let simmer for one minute, stirring.
5. Add the parsley and remove from the heat. Pour pasta onto a heated platter and add a bit of cracked black pepper. Serve at once.
