Sesame Braised Chicken

(Serves 4)

INGREDIENTS:
Oil 3 tablespoons
Chicken breast, diced in 1” pieces 1 pound
Sesame seeds 2 tablespoons
Garlic, minced 2 cloves
Onion, sliced thin 1 small
Gingerroot, minced 1 tablespoon
Savoy cabbage, shredded 3 cups
Chicken broth 1 cup
Turmeric 1/2 teaspoon
Coriander 1 teaspoon
Tomatoes, canned, chopped 1 cup
White vinegar 2 tablespoons
Scallions, chopped 1/2 bunch
Salt and pepper to taste

METHOD OF PREPARATION:
1. Heat the oil in a large skillet.
2. Add the chicken and sesame seeds and quickly stir until the chicken starts to brown.
3. Add the garlic and onion and toss for a minute.
4. Add the gingerroot and cabbage and toss to incorporate well.
5. Add the broth, turmeric, coriander, and quickly simmer until the chicken is cooked.
6. Add the tomatoes, vinegar, scallions, and adjust the seasonings. Toss well and serve.
