Rainbow Popcorn

Ingredients:

Popcorn, freshly popped 2 quarts
Unsalted butter 1/4 cup
Corn syrup 1/4 cup
Sugar 1/2 cup
Strawberry gelatin 1 package
Green sugar sprinkles As needed
Blue sugar sprinkles As needed

Method of Preparation:

1. Preheat oven to 250 degrees.
2. Spray a sheet pan with non-stick spray.
3. Place the popcorn in a bowl that has been sprayed with non-stick spray.
4. In a saucepan, heat the butter, corn syrup, and sugar to a simmer. Using a whisk, add the gelatin powder and whisk gently until dissolved. Bring the mixture to a boil and simmer for 5 minutes.
5. Quickly pour the mixture over the popcorn and stir to coat evenly. Spread the mixture in a thin layer immediately onto the greased sheet pan and sprinkle with the colored sprinkles.
6. Bake for 10-12 minutes, stirring often. Remove from the oven and let cool, then break into pieces.
