Pork Loin Stir Fry
Cooking: Pork Loin Stir Fry
It's Skillet Dinner Week on Cooking with Class.Serves 4
Ingredients:
3/4 pound boneless pork loin
5 slices bacon
1 shallot, chopped
1 clove garlic, finely minced
1 cup thinly sliced mushrooms
2 eggs
3 cups cold cooked rice
3 tablespoons low sodium chicken broth
1 1/2 tablespoons low sodium soy sauce
Salt and freshly ground black pepper
Method of Preparation:
1. Slice pork across the grain into 2” strips; set aside.
2. In a large skillet, cook bacon until crisp. Remove and drain on paper towels. Crumble and set aside.
3. Remove all but 2 tablespoons of bacon drippings from the pan. Add the pork strips and stir fry over medium-high heat until browned and cooked through. Remove pork from skillet. Add shallots and stir fry for 3-4 minutes until almost tender. Add mushrooms and garlic and stir-fry 2-3 minutes longer, until mushrooms soften.
4. In a small bowl, beat the eggs and add to the skillet. Cook, scrambling, until eggs begin to set. Return the pork and bacon to the skillet, add the cooked rice and stir-fry for 2-3 minutes, stirring gently, until eggs are set. Stir in the chicken broth and soy sauce. Cook 2-3 minutes longer or until heated through. Eason to taste with salt and pepper. Serve immediately.
