Pepper Steak

(Serves 4)

INGREDIENTS:
Flank steak, sliced thin across the grain 1 and 1/2 pounds
Salt and cracked pepper to taste
Oil 2 tablespoons
Red pepper, sliced julienne 1
Yellow pepper, sliced julienne 1
Green pepper, sliced julienne 1
Onion, sliced thin 1/2
Beef broth 1/2 cup
Cooked rice 2 cups
Salt and pepper to taste

METHOD OF PREPARATION:
1. Place the sliced meat on a platter and season both sides with salt and pepper.
2. Heat a large skillet until hot and add the oil. Quickly add the vegetables and saute for 2 minutes tossing to saute.
3. Remove from the heat and add the seasoned beef and quickly sauté until browned only about 1 minute. Add the peppers back in the pan and add the broth.
4. Adjust the seasonings and serve over boiled rice. Serve at once.
