Pan-Seared Chicken with Dijon and Tarragon

(Serves 4)

INGREDIENTS:
Oil 2 tablespoons
Chicken breast halves, boneless 4
Onion, sliced very thin 1 small
Garlic, sliced 3 cloves
Dijon mustard 1/4 cup
Chicken broth 1/2 cup
Honey 1 tablespoon
Tarragon, chopped 1 tablespoon
Parsley, chopped 2 tablespoons
Salt and pepper to taste

METHOD OF PREPARATION:
1. Heat a large skillet and add the oil.
2. Add the chicken and brown well on both sides.
3. Add the onions and garlic. Cook for 1 minute.
4. Add the mustard and quickly add the broth and bring to a light simmer.
5. Add the honey and stir.
6. Remove from the heat and add the tarragon, parsley, and salt and pepper to taste. Serve at once.
