Orange Sesame Dressing

Ingredients:

1 cup orange juice fresh squeezed
1 teaspoon honey
2 teaspoons sesame oil
1 tablespoon tamari (or regular soy sauce)
2 tablespoons rice wine vinegar
1/4 cup water
1 teaspoon hot red pepper sauce (optional)
1 shallot, chopped
2 teaspoons grated fresh ginger


Method of Preparation:

1. In a small saucepan, bring the orange juice to a boil and cook until reduced by half.  Remove from heat and allow to cool to slightly.
2. In the bowl of a food processor, combine the orange juice with the honey, sesame oil, tamari, vinegar, water, and hot sauce.  Add the shallot and ginger and process until smooth. 
3. Transfer to a bowl or jar.  Cover and refrigerate until ready to serve.
