Lobster Ravioli with Pink Vodka Sauce
Lobster Ravioli
The chef has some Italian Pasta recipes, and today's favorite is a Lobster Ravioli with Pink Vodka Sauce.(Serves 4)
Ingredients:
3 tablespoons olive oil
1 small onion, chopped
4 cloves garlic, minced
1/4 teaspoon crushed red pepper flakes
1/2 cup vodka
28-ounce can crushed tomatoes
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese, divided
Salt and black pepper, to taste
1 pound lobster ravioli, prepared according to package directions
Method of Preparation:
1. In a large saucepan, heat the olive oil medium heat. Stir in the onion and cook until translucent, about 5 minutes. Add the garlic and crushed red pepper flakes and cook, stirring, for an additional minute.
2. Stir the crushed tomatoes into the onion mixture, turn heat to high, and bring sauce to a boil. Reduce heat to low, and simmer for about 30 minutes, stirring occasionally.
3. Stir in the vodka and cream and simmer for a few minutes until heated through and slightly thickened, stirring occasionally.
4. Stir in 1/4 cup of the Parmesan cheese and season with salt and pepper.
5. Serve immediately with prepared pasta. Sprinkle with remaining Parmesan.
