Greek Shrimp with Feta Cheese (Greece)

Serves 4

Ingredients:
Olive oil 2 tablespoons
Onion, minced 1/2 cup
Scallions, sliced thin 4
Garlic, minced 2 cloves
Shrimp, peeled and deveined 1 pound
Lemon juice 2 tablespoons
Tomatoes, chopped 1 cup
White wine 1/2 cup
Oregano 1/2 teaspoon
Salt and pepper as needed
Feta cheese, chopped 1/2 pound
Parsley, chopped 2 tablespoons

Method of preparation
1. In a large skillet, heat oil until hot.
2. Add the onions, scallions, and garlic; saute for 1 minute.
3. Add the shrimp and saute for 1 minute. Add the lemon juice, tomatoes, and wine. Let simmer for just 2 minutes.
4. Remove from the heat and add the oregano, salt, pepper and feta cheese. Stir to incorporate and serve over pilaf. Sprinkle parsley on top and serve at once.
