Chocolate Banana Pizza

(Serves 4)

Ingredients:
For the dough:
Flour 3 cups
Sugar 1 tablespoon
Yeast, dry 1 tablespoon
Salt 1/4 teaspoon
Water, warm 1 cup
Oil 1 tablespoon

For the topping:
Apricot preserves 1 cup
Bananas, ripe and sliced 2
Semi-sweet chocolate chips 1 cup

Method of Preparation
1. In a bowl, place 2 and 1/2 cups of flour, sugar, the yeast and salt.  Mix well.
2. Add the warm water and mix well to form soft dough.  Using your hands add the remaining flour and mix the dough and knead it until soft.  Cover and keep in a warm place to double on size.
3. Punch down the dough and shape into 4 equal balls and let rise for 15 minutes.
4. Roll out to 1/8-inch thick.  It should be about 7-8-inch round.
5. Place on a round pizza pan and place it in a 425 degree oven for 5 minutes.
6. Remove and spread the apricot preserve over the top neatly lay the bananas next, then sprinkle on the chocolate chips.  Place back in the oven until the bottom is well browned.  Remove from the oven and let set for 10 minutes. Fold in half and enjoy.
