Chicken Curry Sate Stir Fry

(Serves 4)

INGREDIENTS
Oil 2 tablespoons
Pepper, sliced julienne 1
Gingerroot, minced 1 tablespoon
Chicken breasts, boneless, skinless, sliced julienne 1 pound
Curry powder 1 tablespoon
Peanut butter 1/3 cup
Roasted peanuts, chopped 1/4 cup
Coconut milk 10 ounces
Brown sugar 1 tablespoon
Lime juice 2 tablespoons
Boiled rice

METHOD OF PREPARATION
1. In a large skillet, heat the oil until hot.
2. Add the pepper and ginger and cook 1 minute.  Add the chicken and brown until almost cooked.
3. Add the curry powder and cook.
4. Add the peanut butter, peanuts and coconut milk.  Stir to make smooth.
5. Add the brown sugar and lime juice.  Bring to a simmer until all the chicken is cooked.
6. Serve over boiled rice.
