Baccala (Portugal)

Serves 4
Ingredients:
Salted cod, soaked 2 pounds
Onions, large, sliced thin 2
Butter 2 tablespoons
Garlic, minced 1 clove
Potatoes, baking 3
Salt and pepper to taste
Bread crumbs 2 tablespoons
Black olives, sliced 1/2 cup
Eggs, hard boiled 4
Parsley, chopped 1/2 cup

Method of preparation:
1. Preheat an oven to 350 degrees.
2. Soak the cod in cold water for 24 hours, changing the water several times.
3. Place cod in a pan and cover with water. Simmer until the fish is tender. Drain and remove any bones; flake with a fork in large pieces.
4. In a skillet, saute the onions in the butter until tender. Add the garlic and remove.
5. Boil the potatoes in salted water until tender. Remove the skins and slice into 1/4 inch thick pieces.
6. Grease a 1 and 1/2 quart casserole and layer half the sliced potatoes, then half the cod, half the onions; sprinkle with salt and pepper. Repeat the layers until all mixtures are gone.
7. Sprinkle bread crumbs on top of casserole.
8. Bake for 15-20 minutes until lightly browned. Garnish with olives, eggs and parsley. Serve at once.
