Apple-Filled Pancakes with Tallegio

Serves 2

Ingredients:
For the Stuffing:
1 ounce unsalted butter
1 apple, peeled, cored and chopped
1/2 red onion, peeled, chopped
1 tablespoon brown sugar

For the Pancakes:
3 ounces flour
2 ounces whole milk
2 eggs
1 tablespoon chopped fresh chives
1ounce unsalted butter
3 1/2 ounces taleggio cheese, chopped

Method of Preparation:
1. Preheat the oven to 400 degrees.  Line a baking pan with parchment.
2. For the stuffing, in large frying pan melt the butter over medium heat.  Add the apples, onion, and sugar and cook until soft.
3. Meanwhile, for the pancakes, combine the flour, milk, eggs, and chives mix until smooth.
4. In another large frying pan, melt the butter over medium-high heat.  Pour half of the pancake batter into the pan and cook for one minute or until golden-brown. Turn over and cook for another minute. Transfer to prepared baking pan. Repeat with the remaining batter to make a second pancake.
5. Divide the filling between the pancakes and sprinkle with the cheese.  Roll up each pancake, place pan in oven bake for 3-5 minutes, or until the cheese has melted.  Serve immediately.
