Sweet and Sour Purple Cabbage

Ingredients:

1 teaspoon butter or margarine
1/2 cup chopped onion
3 cups chopped purple cabbage
2 cups apples, sliced and halved
1/4 cup water
2 tablespoons brown sugar
2 tablespoons vinegar
1/2 teaspoon Dijon mustard
1/4  teaspoon salt
1/8 teaspoon pepper
Caraway seeds, optional

Method of Preparation:

1. In a large sauté pan, melt butter or margarine over medium heat.  Add onion and sauté for 1 minute. 
2. Add cabbage and apples and sauté for 3 minutes.
3. Add the remaining ingredients and stir well; cover.  Reduce heat to low and cook 20-25 minutes.  Sprinkle with caraway seed, if desired.
