Steak, Pear and Blue Cheese Salad
(Serves 4)INGREDIENTS:
- 1/2 pound leftover steak, cut into thin strips
- 1 head Boston lettuce
- 6 cups mixed salad greens (such as spring mix)
- 2 pears, cored and cut into slices
- 1/2 red onion, thinly sliced
- 1/4 cup crumbled blue cheese
- 1/2 cup walnuts (optional)
- 1/2 cup red wine and oil salad dressing
- 1 tablespoon minced fresh tarragon leaves
- 1/4 teaspoon pepper
- Arrange Boston lettuce on each plate and top with salad greens. Add pear slices, red onion, and steak strips. Crumble blue cheese and walnuts over each salad.
- In a small mixing bowl, combine bottled dressing, tarragon, and black pepper; whisk well. Drizzle over salads and serve.
