Steak, Pear and Blue Cheese Salad

(Serves 4)

INGREDIENTS:
  • 1/2 pound leftover steak, cut into thin strips
  • 1 head Boston lettuce
  • 6 cups mixed salad greens (such as spring mix)
  • 2 pears, cored and cut into slices
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled blue cheese
  • 1/2 cup walnuts (optional)
  • 1/2 cup red wine and oil salad dressing
  • 1 tablespoon minced fresh tarragon leaves
  • 1/4 teaspoon pepper
METHOD OF PREPARATION:
  1. Arrange Boston lettuce on each plate and top with salad greens. Add pear slices, red onion, and steak strips. Crumble blue cheese and walnuts over each salad.
  2. In a small mixing bowl, combine bottled dressing, tarragon, and black pepper; whisk well. Drizzle over salads and serve.
