Crisp Smashed Baked Potatoes
(Serves 4)INGREDIENTS:
- 4 russet baking potatoes
- 3 tablespoons butter or margarine, melted
- 1 teaspoon paprika
- 1 teaspoon garlic salt
- 2 tablespoon grated parmesan cheese
- Preheat an oven to 350 degrees.
- Place the potatoes on a rack and bake until barely tender when pierced with a knife.
- Remove potatoes from oven and increase heat to 450 degrees.
- Make a deep cross cut (X) in each potato. Wrap your hand in a towel (to keep from burning your hand) and carefully use the heel of your hand to smash potato until it is almost flat. Gently push in the sides.
- Drizzle with the melted butter or margarine, paprika, garlic salt, and cheese.
- Place the smashed potatoes on a baking pan and bake for 15-20 minutes, until they are firm and crisp. Carefully remove from pan and serve.
