Crisp Smashed Baked Potatoes

(Serves 4)

INGREDIENTS:
  • 4 russet baking potatoes
  • 3 tablespoons butter or margarine, melted
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • 2 tablespoon grated parmesan cheese
METHOD OF PREPARATION:
  1. Preheat an oven to 350 degrees.
  2. Place the potatoes on a rack and bake until barely tender when pierced with a knife.
  3. Remove potatoes from oven and increase heat to 450 degrees.
  4. Make a deep cross cut (X) in each potato. Wrap your hand in a towel (to keep from burning your hand) and carefully use the heel of your hand to smash potato until it is almost flat. Gently push in the sides.
  5. Drizzle with the melted butter or margarine, paprika, garlic salt, and cheese.
  6. Place the smashed potatoes on a baking pan and bake for 15-20 minutes, until they are firm and crisp. Carefully remove from pan and serve.
