(Serves 4)

INGREDIENTS:
BEEF:
  • 1 pound beef flank steak, sliced thinly across the grain
  • 1/4 cup peanut oil, for frying
MARINADE:
  • 1 tablespoon light soy sauce
  • 1 tablespoon dry sherry or rice wine
  • 1/2 teaspoon freshly grated ginger
CHOWING SAUCE:
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, sliced thinly
  • 4 green onions, sliced Chinese style
  • 1 teaspoon hoisin sauce
  • 1/4 teaspoon ground white pepper
METHOD OF PREPARATION:
  1. Combine marinade ingredients; mix well. Marinate sliced beef in marinade for at least 15 minutes. Drain marinade well and separate meat into individual pieces.
  2. In a wok or deep pan, heat the oil until very hot. Add meat all at once and stir to separate. Remove after 1 minute and allow meat to drain.
  3. Heat wok again and add oil for chowing. Add garlic and green onions and chow for just a moment. Add hoisin sauce, pepper and meat. Chow until all is hot then serve.
