Lemon Buttermilk Bread Pudding
(Serves 8)FOR THE SAUCE:
- 1 pint fresh blackberries
- 1/4 cup sugar
- 1 tbsp brandy
- 2 cups buttermilk
- 1/3 cup fresh lemon juice
- 4 large eggs beaten
- 1 cup sugar
- 1 tsp vanilla
- 3 tbsp butter melted
- 8 slices French bread cut into 1” cubes
- 1 tsp lemon zest
- 1/2 tsp ground cinnamon
FOR THE SAUCE:
- Place the berries and sugar in a sauce pan and mix.
- Add the brandy and heat just to a simmer stirring constantly. Remove from the heat and chill.
- In a bowl, combine the buttermilk, lemon juice, eggs and sugar whisk well.
- Add the vanilla, melted butter lemon zest and cinnamon.
- Place the bread cubes in a casserole and pour the liquid over the bread mixing well.
- Bake at a 350 preheated oven for 40 min. Let set at room temperature and serve with the blackberry sauce.
