Lemon Buttermilk Bread Pudding

(Serves 8)

FOR THE SAUCE:
  • 1 pint fresh blackberries
  • 1/4 cup sugar
  • 1 tbsp brandy
FOR THE PUDDING:
  • 2 cups buttermilk
  • 1/3 cup fresh lemon juice
  • 4 large eggs beaten
  • 1 cup sugar
  • 1 tsp vanilla
  • 3 tbsp butter melted
  • 8 slices French bread cut into 1” cubes
  • 1 tsp lemon zest
  • 1/2 tsp ground cinnamon
METHOD OF PREPARATION:

FOR THE SAUCE:
  1. Place the berries and sugar in a sauce pan and mix.
  2. Add the brandy and heat just to a simmer stirring constantly. Remove from the heat and chill.
FOR THE PUDDING:
  1. In a bowl, combine the buttermilk, lemon juice, eggs and sugar whisk well.
  2. Add the vanilla, melted butter lemon zest and cinnamon.
  3. Place the bread cubes in a casserole and pour the liquid over the bread mixing well.
  4. Bake at a 350 preheated oven for 40 min. Let set at room temperature and serve with the blackberry sauce.
