Greek Hero Sandwich
(Serves 2)INGREDIENTS:
- 1 loaf good French bread, foot-long at least
- Hummus, homemade or store bought
- 2 roasted red peppers, cut into strips
- 1 medium cucumber, sliced (will have some left over)
- 1/4-1/2 cup red onion, thinly sliced
- 2 fresh tomatoes, sliced
- 3-4 ounces feta cheese, crumbled
- Kalamata olives, pitted and sliced
- Oregano
- Romaine lettuce
- Olive oil (optional)
- Slice bread in half lengthwise.
- Spread the hummus on the bottom half of the bread.
- Layer with roasted red peppers, cucumber, onion, and tomatoes.
- Sprinkle with feta cheese and olives.
- Sprinkle with some oregano.
- Drizzle with olive oil, if desired.
- Cover with lettuce.
- Place top half of bread on top.
- Use 4 toothpicks to secure the sandwich in equal portions.
- Slice and serve.
