Greek Hero Sandwich

(Serves 2)

INGREDIENTS:
  • 1 loaf good French bread, foot-long at least
  • Hummus, homemade or store bought
  • 2 roasted red peppers, cut into strips
  • 1 medium cucumber, sliced (will have some left over)
  • 1/4-1/2 cup red onion, thinly sliced
  • 2 fresh tomatoes, sliced
  • 3-4 ounces feta cheese, crumbled
  • Kalamata olives, pitted and sliced
  • Oregano
  • Romaine lettuce
  • Olive oil (optional)
METHOD OF PREPARATION:
  1. Slice bread in half lengthwise.
  2. Spread the hummus on the bottom half of the bread.
  3. Layer with roasted red peppers, cucumber, onion, and tomatoes.
  4. Sprinkle with feta cheese and olives.
  5. Sprinkle with some oregano.
  6. Drizzle with olive oil, if desired.
  7. Cover with lettuce.
  8. Place top half of bread on top.
  9. Use 4 toothpicks to secure the sandwich in equal portions.
  10. Slice and serve.
