Spaghetti Pie
(Serves 6)INGREDIENTS:
- 6 ounces dry spaghetti noodles
- 2 tablespoons butter or margarine
- 1/2 cup Parmesan cheese
- 2 eggs, beaten well
- 1/2 pound ground beef
- 1/2 cup chopped onion
- 1 8-ounce can Italian-style stewed tomatoes (do not drain)
- 1 6-ounce can tomato paste
- 1 teaspoon sugar
- 1 teaspoon dried oregano, crushed
- 1/2 clove garlic, minced
- 1 cup cottage cheese
- 1/2 cup shredded cheese (your choice: mozzarella, cheddar, American, or Monterey Jack)
- In a large pot of boiling water cook the spaghetti noodles; drain. Return noodles to pot.
- Stir the butter into the hot noodles until melted. Stir in the Parmesan cheese and eggs.
- Place the pasta mixture in a buttered 9-inch pie plate and form into a crust shape.
- In a skillet, cook the ground beef and onion until meat is browned; drain.
- Return meat mixture to skillet. Stir in the tomatoes, tomato paste, sugar, oregano, and garlic. Heat through.
- Spread the cottage cheese over the bottom of the spaghetti crust. Top with tomato/meat mixture. Sprinkle grated cheese over all.
- Cover pie pan with foil. Bake at 350° for 30 minutes. Remove the foil and continue baking until cheese is lightly browned and bubble. Serve at once.
