Spaghetti Pie

(Serves 6)

INGREDIENTS:
  • 6 ounces dry spaghetti noodles
  • 2 tablespoons butter or margarine
  • 1/2 cup Parmesan cheese
  • 2 eggs, beaten well
  • 1/2 pound ground beef
  • 1/2 cup chopped onion
  • 1 8-ounce can Italian-style stewed tomatoes (do not drain)
  • 1 6-ounce can tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano, crushed
  • 1/2 clove garlic, minced
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (your choice: mozzarella, cheddar, American, or Monterey Jack)
METHOD OF PREPARATION:
  1. In a large pot of boiling water cook the spaghetti noodles; drain. Return noodles to pot.
  2. Stir the butter into the hot noodles until melted. Stir in the Parmesan cheese and eggs.
  3. Place the pasta mixture in a buttered 9-inch pie plate and form into a crust shape.
  4. In a skillet, cook the ground beef and onion until meat is browned; drain.
  5. Return meat mixture to skillet. Stir in the tomatoes, tomato paste, sugar, oregano, and garlic. Heat through.
  6. Spread the cottage cheese over the bottom of the spaghetti crust. Top with tomato/meat mixture. Sprinkle grated cheese over all.
  7. Cover pie pan with foil. Bake at 350° for 30 minutes. Remove the foil and continue baking until cheese is lightly browned and bubble. Serve at once.
