Barbecued Beef On Onion Rolls

(Serves 4)

INGREDIENTS:
  • 2 pounds beef chuck roast, cut crosswise into 1/4-inch slices
  • 2 tablespoons oil
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 cups ketchup
  • 1 cup chicken broth
  • 1/4 cup packed brown sugar
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
6 to 8 onion rolls, split, toasted if desired Garnish with your favorites - pickles, coleslaw, whatever makes you happy!

METHOD OF PREPARATION:
  1. Heat a large skillet over high heat. Add oil and meat. Brown the meat well.
  2. Add the onion and garlic; sauté for 2 minutes.
  3. Add the ketchup, chicken broth, brown sugar, Worcestershire sauce, mustard, salt, and pepper. Simmer on very low heat for 2 hours.
  4. Serve on good quality onion rolls. Garnish as desired.
