Barbecued Beef On Onion Rolls
(Serves 4)INGREDIENTS:
- 2 pounds beef chuck roast, cut crosswise into 1/4-inch slices
- 2 tablespoons oil
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 2 cups ketchup
- 1 cup chicken broth
- 1/4 cup packed brown sugar
- 1/4 cup Worcestershire sauce
- 1 teaspoon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
METHOD OF PREPARATION:
- Heat a large skillet over high heat. Add oil and meat. Brown the meat well.
- Add the onion and garlic; sauté for 2 minutes.
- Add the ketchup, chicken broth, brown sugar, Worcestershire sauce, mustard, salt, and pepper. Simmer on very low heat for 2 hours.
- Serve on good quality onion rolls. Garnish as desired.
