Chicken Sloppy Joes

(Serves 4)

INGREDIENTS:
  • 1 pound ground chicken
  • 1 medium onion, chopped
  • 1 tablespoon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon sugar
  • 1 tablespoon vinegar
  • 3/4 cup ketchup
  • 1 teaspoon salt
  • 1/2 cup green pepper, chopped
  • 1/2 cup celery, chopped
METHOD OF PREPARATION:
  1. In large heavy skillet, brown meat over moderate heat for 2 to 3 minutes, breaking up clumps.
  2. Add onion, mustard, Worcestershire sauce, sugar, vinegar, ketchup, salt, green pepper and celery.
  3. Reduce heat to low and cook for about 40 minutes, stirring occasionally, until flavors mingle.
  4. Place bottom of a hamburger bun on each of four plates and ladle meat sauce generously on top, cover with top of bun. Serve at once.
