(Serves 4)

INGREDIENTS:
  • 2 cups flour, sifted
  • 1 tablespoon sugar
  • 3 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 1/2 cup milk
  • 1 egg
  • 1 cup blueberries
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon grated orange zest
METHOD OF PREPARATION:
  1. In a bowl, combine the flour, the one tablespoon of sugar, baking powder and salt.
  2. Cut in the butter to form a flakey mixture.
  3. Add the milk and egg. Mix only until the flour is slightly dampened. Knead for about 30 seconds.
  4. Roll dough into a rectangle 1/2" thick.
  5. Top the dough with the berries.
  6. In a bowl, combine the 1/4" cup sugar, cinnamon, and orange zest. Sprinkle evenly over the berries.
  7. Roll up like a jelly roll. Seal the edges with a little water.
  8. Place the roll on a well greased sheet pan. Bake in a 400 degree oven until well browned. Let cool.
  9. Slice into 2" thick pieces.
