Blueberry Rollies
(Serves 4)INGREDIENTS:
- 2 cups flour, sifted
- 1 tablespoon sugar
- 3 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup butter
- 1/2 cup milk
- 1 egg
- 1 cup blueberries
- 1/4 cup sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon grated orange zest
- In a bowl, combine the flour, the one tablespoon of sugar, baking powder and salt.
- Cut in the butter to form a flakey mixture.
- Add the milk and egg. Mix only until the flour is slightly dampened. Knead for about 30 seconds.
- Roll dough into a rectangle 1/2" thick.
- Top the dough with the berries.
- In a bowl, combine the 1/4" cup sugar, cinnamon, and orange zest. Sprinkle evenly over the berries.
- Roll up like a jelly roll. Seal the edges with a little water.
- Place the roll on a well greased sheet pan. Bake in a 400 degree oven until well browned. Let cool.
- Slice into 2" thick pieces.
