Rock And Roll Roast Beef
(Serves 4)INGREDIENTS:
- 4 ounces cream cheese, softened
- 1 tablespoon mayonnaise
- 1 tablespoon horseradish
- 3 scallions, chopped
- 1/4 cup kalmata olives, chopped
- 1/2 pound sliced roast beef
- 1/2 pound sliced provolone cheese
- 4 romaine lettuce leaves, chopped
- 2 ripe tomatoes, sliced very thin
- 4 lavosh slices
- In a bowl, blend the cream cheese, mayonnaise, and horseradish. Mix to blend well.
- Fold in the scallions and olives.
- Spread the lavosh with the cream cheese mixture
- Add the roast beef, cheese, shredded romaine, and tomatoes. Roll up tightly, wrap, and chill.
- Slice on a bias and serve.
