Rock And Roll Roast Beef

(Serves 4)

INGREDIENTS:
  • 4 ounces cream cheese, softened
  • 1 tablespoon mayonnaise
  • 1 tablespoon horseradish
  • 3 scallions, chopped
  • 1/4 cup kalmata olives, chopped
  • 1/2 pound sliced roast beef
  • 1/2 pound sliced provolone cheese
  • 4 romaine lettuce leaves, chopped
  • 2 ripe tomatoes, sliced very thin
  • 4 lavosh slices
METHOD OF PREPARATION:
  1. In a bowl, blend the cream cheese, mayonnaise, and horseradish. Mix to blend well.
  2. Fold in the scallions and olives.
  3. Spread the lavosh with the cream cheese mixture
  4. Add the roast beef, cheese, shredded romaine, and tomatoes. Roll up tightly, wrap, and chill.
  5. Slice on a bias and serve.
