(Serves 4)

INGREDIENTS:
  • 1 pound flank steak
  • 1/4 cup red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon fresh sage, chopped
  • 1 teaspoon fresh oregano, chopped
  • 1/2 teaspoon salt
  • Pinch of dry mustard
  • 1/4 teaspoon smoked paprika
  • 1 onion, thinly sliced
  • 8 flour tortillas
  • 1 cup salsa
  • 1/2 cup chopped chilies
  • 1 cup queso fresco cheese
METHOD OF PREPARATION:
  1. In a large zip lock bag, add the flank steak, vinegar, sage, oregano, salt, mustard and paprika. Massage to marinate and refrigerate overnight.
  2. When ready, prepare a grill or heat a sauté pan. Remove the flank from the marinade and grill or sauté until medium rare.
  3. Slice the flank very thinly.
  4. Place steak slices on the tortillas and garnish with a bit of salsa, chilies and queso fresco cheese. Roll folding in the ends and serve at once.
