Pasta Rustic With Smoked Mozzarella

(Serves 4)

INGREDIENTS
  • 1 pound cheese tortellini, cooking
  • 4 tablespoons olive oil
  • 1 onion, julienne
  • 1 basket cherry tomatoes, cut in half
  • 1 large garlic clove, minced
  • 1/2 cup white vermouth wine
  • 3/4 cup parsley, chopped
  • 3/4 cup basil, chopped
  • 1/2 cup Kalamata olives
  • 1 teaspoon dried oregano
  • 1 cup smoked mozzarella, chopped
METHOD OF PREPARATION
  1. In a large sauté pan, heat the oil until hot; add the onions and brown.
  2. Add the tomatoes and garlic and sauté for a minute.
  3. Add the vermouth and simmer for 1 minute.
  4. Add the parsley, basil, olives and oregano and cooked tortellini; toss through.
  5. Add the mozzarella and toss for just a minute and serve.
