Pasta Rustic With Smoked Mozzarella
(Serves 4)INGREDIENTS
- 1 pound cheese tortellini, cooking
- 4 tablespoons olive oil
- 1 onion, julienne
- 1 basket cherry tomatoes, cut in half
- 1 large garlic clove, minced
- 1/2 cup white vermouth wine
- 3/4 cup parsley, chopped
- 3/4 cup basil, chopped
- 1/2 cup Kalamata olives
- 1 teaspoon dried oregano
- 1 cup smoked mozzarella, chopped
- In a large sauté pan, heat the oil until hot; add the onions and brown.
- Add the tomatoes and garlic and sauté for a minute.
- Add the vermouth and simmer for 1 minute.
- Add the parsley, basil, olives and oregano and cooked tortellini; toss through.
- Add the mozzarella and toss for just a minute and serve.
