Tagliatelle With Smoked Salmon Cream Sauce
(Serves 4)INGREDIENTS
- 1 cup clam juice
- 1 and 1/2 cups heavy cream
- 2 tablespoons dill, chopped
- 1 tablespoon parsley, chopped
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest, minced
- 1 pound tagliatelle pasta, cooking
- 6 ounces smoked salmon, coarsely chopped
- In a saucepan, combine the clam juice and cream; bring to a boil and let reduce by half.
- Quickly add the dill and parsley; stir.
- Add the lemon juice and zest.
- Drain the pasta and add the sauce to the pasta; add the smoked salmon and heat through.
- Serve at once.
