Tagliatelle With Smoked Salmon Cream Sauce

(Serves 4)

INGREDIENTS
  • 1 cup clam juice
  • 1 and 1/2 cups heavy cream
  • 2 tablespoons dill, chopped
  • 1 tablespoon parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest, minced
  • 1 pound tagliatelle pasta, cooking
  • 6 ounces smoked salmon, coarsely chopped
METHOD OF PREPARATION
  1. In a saucepan, combine the clam juice and cream; bring to a boil and let reduce by half.
  2. Quickly add the dill and parsley; stir.
  3. Add the lemon juice and zest.
  4. Drain the pasta and add the sauce to the pasta; add the smoked salmon and heat through.
  5. Serve at once.
