Brownie Fudge Pudding

(Serves 6)

INGREDIENTS
  • 3/4 cup flour
  • 3/4 cup sugar
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • pinch salt
  • 1/3 cup plus 1/4 cup cocoa powder
  • 1 tablespoon butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1/3 cup brown sugar
  • 1 and 3/4 cups boiling water.
METHOD OF PREPARATION
  1. Heat an oven to 250 degrees.
  2. Lightly spray a square baking pan.
  3. Combine flour, sugar, baking powder, baking soda and salt; mix well.
  4. Add 1/3 cup of cocoa powder and mix well.
  5. Add the butter, milk, vanilla and cream to batter, beating well.
  6. In another bowl, combine the brown sugar and the 1/4 cup cocoa powder; mix well.
  7. Spoon the batter into the baking dish and sprinkle with the brown sugar mixture.
  8. Pour the boiling water on top without stirring; bake for 30-35 minutes until a knife inserted comes out clean.
  9. Cool for about 10 minutes, and then serve.
