Chocolate Truffle Pudding

(Serves 4)

INGREDIENTS
  • 1 cup milk
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 4 tablespoons cocoa powder
  • 2 tablespoons corn starch
  • 3/4 cup semi-sweet chocolate bits
  • 1 egg
  • 2 egg yolks
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • whipped cream (for garnish)grated orange zest (for garnish)
METHOD OF PREPARATION
  1. In a large saucepan, stir the milk and cream until very hot.
  2. In a small bowl, combine the sugar, cocoa powder and cornstarch; slowly add this to the milk mixture.
  3. Add the remaining ingredients except for the garnishes; continue cooking, stirring constantly until thickened (about 7 minutes).
  4. Pour the pudding into small soufflé dishes; let chill and finish by garnishing with whipped cream and orange zest.
