Chocolate Truffle Pudding
(Serves 4)INGREDIENTS
- 1 cup milk
- 1 cup heavy cream
- 1/2 cup sugar
- 4 tablespoons cocoa powder
- 2 tablespoons corn starch
- 3/4 cup semi-sweet chocolate bits
- 1 egg
- 2 egg yolks
- 2 tablespoons butter
- 1 teaspoon vanilla
- whipped cream (for garnish)grated orange zest (for garnish)
- In a large saucepan, stir the milk and cream until very hot.
- In a small bowl, combine the sugar, cocoa powder and cornstarch; slowly add this to the milk mixture.
- Add the remaining ingredients except for the garnishes; continue cooking, stirring constantly until thickened (about 7 minutes).
- Pour the pudding into small soufflé dishes; let chill and finish by garnishing with whipped cream and orange zest.
