Old-Time Banana Pudding

(Serves 4)

INGREDIENTS
  • 1/2 cup sugar
  • 2 and 1/2 tablespoons flour
  • pinch salt
  • 2-cup milk
  • 3 eggs, separated
  • 2 teaspoons vanilla extract
  • 12 ounces vanilla wafers
  • 4 ripe bananas
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
METHOD OF PREPARATION
  1. In the top of a double boiler, combine the sugar, flour and salt; mix well.
  2. Slowly add the milk and stir until blended.
  3. Stir the mixture over boiling water until smooth and slightly thickened.
  4. Beat the yolks until a light they turn a light, yellow color.
  5. Temper them into the hot mixture; add the 2 teaspoons of vanilla.; remove from heat.
  6. Grease a 3- quart casserole and layer 1/4 of the wafers on the bottom.
  7. Peel and slice the bananas and ay a few slices on top.
  8. Spoon 1/4 of the pudding on top; repeat layers until all is used.
  9. Beat the egg whites with 1/4 cup of the sugar until stiff peaks form; add the vanilla and spread on top of the pudding.
  10. Place in a 350 degree oven for 20 minutes until brown.
  11. Serve warm.
