Old-Time Banana Pudding
(Serves 4)INGREDIENTS
- 1/2 cup sugar
- 2 and 1/2 tablespoons flour
- pinch salt
- 2-cup milk
- 3 eggs, separated
- 2 teaspoons vanilla extract
- 12 ounces vanilla wafers
- 4 ripe bananas
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- In the top of a double boiler, combine the sugar, flour and salt; mix well.
- Slowly add the milk and stir until blended.
- Stir the mixture over boiling water until smooth and slightly thickened.
- Beat the yolks until a light they turn a light, yellow color.
- Temper them into the hot mixture; add the 2 teaspoons of vanilla.; remove from heat.
- Grease a 3- quart casserole and layer 1/4 of the wafers on the bottom.
- Peel and slice the bananas and ay a few slices on top.
- Spoon 1/4 of the pudding on top; repeat layers until all is used.
- Beat the egg whites with 1/4 cup of the sugar until stiff peaks form; add the vanilla and spread on top of the pudding.
- Place in a 350 degree oven for 20 minutes until brown.
- Serve warm.
