New England Corn Pudding
(Serves 6)INGREDIENTS
- 3 cups milk
- 1 cup heavy cream
- 1/2 cup cornmeal
- 1/2 cup brown sugar
- 1/2 cup molasses
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 4 large eggs
- 4 tablespoons cold butter, cut into pieces
- Preheat an oven to 350 degrees.
- Lightly grease a 2-quart casserole with butter
- In a saucepan, scald the milk carefully; while the milk is hot, add the cream and whisk well.
- Add the cornmeal, sugar, molasses and spices; cook for 5 minutes
- Remove from heat and add the eggs one at a time, beating well after each addition.
- Add the butter in pieces and beat until melted.
- Pour this into the casserole and place in a pan ands add hot water about 1/2 way up; bake for about 1 and ¼ hours or until a knife inserted in the center comes out clean.
- Let cool to warm and serve with ice cream.
