New England Corn Pudding

(Serves 6)

INGREDIENTS
  • 3 cups milk
  • 1 cup heavy cream
  • 1/2 cup cornmeal
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 4 large eggs
  • 4 tablespoons cold butter, cut into pieces
METHOD OF PREPARATION
  1. Preheat an oven to 350 degrees.
  2. Lightly grease a 2-quart casserole with butter
  3. In a saucepan, scald the milk carefully; while the milk is hot, add the cream and whisk well.
  4. Add the cornmeal, sugar, molasses and spices; cook for 5 minutes
  5. Remove from heat and add the eggs one at a time, beating well after each addition.
  6. Add the butter in pieces and beat until melted.
  7. Pour this into the casserole and place in a pan ands add hot water about 1/2 way up; bake for about 1 and ¼ hours or until a knife inserted in the center comes out clean.
  8. Let cool to warm and serve with ice cream.
