Savory Cheddar Sandwiches

(Serves 6)

INGREDIENTS
  • 10 ounces cheddar, shredded
  • 1 egg, hard cooked
  • 2 tablespoon butter
  • 1 tablespoon onion, chopped
  • 1 tablespoon flour
  • 1/2 cup cream
  • 1/4 teaspoon salt
  • 2 drops Tabasco sauce
  • 2 tablespoon lemon juice
  • 1 tablespoon pimento, chopped
  • 1 tablespoon stuffed olives
  • 12 slices bacon
  • 1 tablespoon butter, softened
METHOD OF PREPARATION
  1. Put the shredded cheese in a bowl and set aside. Chop the egg and set aside.
  2. Melt the butter in a skillet over low heat. Add the onion and cook until transparent, then add the flour and stir until well-blended. Heat until bubbly.
  3. Add the cream, Tabasco and salt; stir constantly until well-blended. Cook until the mixture boils. Cook 1-2 minutes longer and remove from heat.
  4. Blend in the lemon juice. Add the cream mixture to the cheese and add the egg, pimento, stuffed olives to the mixture. Mix until well-blended and set aside.
  5. Pan broil the bacon slices until they are partially cooked and still limp.
  6. Spread the bread with the softened butter then spread the cheddar mixture on the bread allowing 1/4 cup for each slice.
  7. Top each slice with 2 of the bacon slices crossed diagonally. Set the oven temperature to broil.
  8. Arrange the sandwiches on the broiler rack with the tops of the sandwiches 3 inches below the heat source.
  9. Broil until cheddar mixture is bubbly and slightly browned and bacon slices are crisp. Serve hot.
