Grilled Tenderloin With Barbecue Sauce

INGREDIENTS
  • 3 tablespoons oil
  • 1 and 1/2 cups onion, chopped
  • 2 garlic cloves, chopped
  • 1 green pepper, chopped
  • 1 and 1/2 cups Andouille sausage, diced small
  • 2 cups tomato sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 2 pounds beef tenderloin, cut into mignons, (about 3 ounces each)
METHOD OF PREPARATION
  1. Have a grill set on medium high heat.
  2. In a saucepan heat the oil until hot; add the onion and garlic and sauté for 2 minutes.
  3. Add the peppers and Andouille sausage and sauté for 2 more minutes.
  4. Add the tomato sauce, sugar, vinegar, chili powder and cumin; bring to a simmer and let cook for 30 minutes.
  5. Allow sauce to sit for 15 minutes.
  6. Lightly spray the grill and grill the tenderloin. Place the mignons on a warm platter and pour the andouille sauce on top.
  7. Serve at once.
