Grilled Tenderloin With Barbecue Sauce
INGREDIENTS- 3 tablespoons oil
- 1 and 1/2 cups onion, chopped
- 2 garlic cloves, chopped
- 1 green pepper, chopped
- 1 and 1/2 cups Andouille sausage, diced small
- 2 cups tomato sauce
- 2 tablespoons brown sugar
- 1 teaspoon balsamic vinegar
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 2 pounds beef tenderloin, cut into mignons, (about 3 ounces each)
- Have a grill set on medium high heat.
- In a saucepan heat the oil until hot; add the onion and garlic and sauté for 2 minutes.
- Add the peppers and Andouille sausage and sauté for 2 more minutes.
- Add the tomato sauce, sugar, vinegar, chili powder and cumin; bring to a simmer and let cook for 30 minutes.
- Allow sauce to sit for 15 minutes.
- Lightly spray the grill and grill the tenderloin. Place the mignons on a warm platter and pour the andouille sauce on top.
- Serve at once.
