Chewy Fruit And Oatmeal Bars

(Serves 6-8)

INGREDIENTS
  • Brown Sugar (firmly packed) 3/4 cup
  • Granulated Sugar 1/2 cup
  • Low-fat Vanilla Yogurt (or plain) 1-8 ounce container
  • Egg Whites (lightly beaten) 2
  • Vegetable Oil 2 tablespoons
  • Nonfat Milk 2 tablespoons
  • Vanilla 2 teaspoons
  • All-purpose Flour 1 1/2 cups
  • Baking Soda 1 teaspoon
  • Ground Cinnamon 1 teaspoon
  • Salt 1/2 teaspoon
  • Oats (quick or old-fashioned) 3 cups
  • Dried Fruit (diced) 1 cup
METHOD OF PREPARATION
  1. Heat oven to 350 degrees.
  2. In a large bowl combine sugars, yogurt, egg whites, oil milk and vanilla; mix well.
  3. In a medium bowl combine flour, baking soda, cinnamon and salt; mix well.
  4. Add dry ingredients to wet mix; mix well.
  5. Stir in oats and dried fruit.
  6. Spread dough onto bottom of ungreased 13x9 inch baking pan.
  7. Bake 8-32 minutes or until golden brown.
  8. Cool completely on wire rack.
  9. Cut into bars. Store tightly covered.
