Smoked Turkey Phyllo Sandwich

(Serves 4)

INGREDIENTS
Phyllo dough 24 sheets
Butter, melted, clarified 1/2 cup more or less
Bacon, chopped 4 pieces
Mushrooms, sliced thin 1 cup
Ricotta 1 cup
Basil, chopped 3 tablespoons
Smoked turkey, chopped 1 pound

METHOD OF PREPARATION
1. Preheat an oven to 350 degrees.
2. Lay 4 sections of filo dough, 2 sheets each and butter well.
3. Place 2 more sheets over the buttered ones.  Repeat so you have 6 sheet sections.
4. In a sauté pan, cook the bacon until crisp.  Add the mushrooms and cook for 1 minute.
5. Remove from the heat and add the ricotta and basil.  Mix to form a paste.  Add the turkey and mix well.
6. Divide the mixture into 4 sections and place a pile in the corner either right or left side.
7. Start to fold corner to corner like folding a flag.  When done, butter well and make a slit in each piece.
8. Place on a sheet pan and bake for 30 minutes until very well browned.  Let cool for a few minutes and serve.
