Caramel Popcorn

Ingredients:

Brown sugar 1 cup
Unsalted butter 1 stick
Corn syrup, white 1/4 cup
Salt Pinch
Baking soda 1/2 teaspoon
Vanilla 1/2 teaspoon
Popcorn, freshly popped, lightly buttered 4 quarts
Dry, roasted nuts 1 pound

Method of preparation:

1. In a large saucepan, combine the brown sugar, butter, corn syrup and salt.
2. Bring to a boil and stir constantly for 2 minutes.
3. Remove the pan from the heat and add the baking soda and vanilla. Be careful, as the mixture will foam up a little. Stir until the mixture settles down.
4. Place the popped popcorn in a very large bowl and pour some of the caramel mixture over it and add some of the dry, roasted nuts. Mix carefully with a spoon; mixture is hot. Continue this process until all popcorn, caramel and nuts are mixed together.
5. When all ingredients are combined, pour popcorn onto a lightly oiled sheet pan and place in a 250 degree oven for 15 minutes. Turn mixture over and bake for another 15 minutes.
6. Allow to cool. Break into pieces. Serve.
